Lovers of the espresso martini will be excited to hear that they have one more sleep until Insomnia Espresso Martini Bar opens its doors in Edinburgh on Friday 27th of August with the largest range of espresso martinis in Scotland.
The aptly named cocktail bar will be open on Fridays and Saturdays from 5pm till late with a menu of 20 different serves of espresso menus - those who are looking for a drink to keep them awake till the wee hours of the morning to enjoy the last Scottish summer evenings will find no better place.
The team at Insomnia recognise that the best way to do espresso martinis is to roast and grind their coffee beans on site. They source their organic Arabica coffee from El Botan Farm in Colombia where they proceed to roast a batch every day to ensure freshness and create a rich, dark blend which pairs perfectly with their cocktails.
Insomnia are thrilled to celebrate their launch in the capital and have created some Edinburgh-inspired serves. The ‘One O’Clock Gun’ uses Ketel One, ‘Edinburgh Castle Rock’ has a mixed berry infused vodka while ‘Mr Black Coffee Liqueur’ features cold brew topped with a smoked cloud.
Other variations of the espresso martini include their House specialty which is a unique blend of Belvedere vodka, cold brew espresso, maple syrup and Kahlua coffee liqueur. They also offer adventurous options such as the Piña Cortada which features Tanqueray gin, pineapple syrup, fresh espresso and coconut milk.
Although the menu will initially have 20 different servings of the espresso martini, the bar team aims to add a new option every week with the intention to have a selection of 50 espresso martinis by the end of the year.
The bar will also offer a range of other drinks such as beer, wine, cider and spirits and a food menu will be added later in the year. Fries and arrays of affogatos are intended to be on the menu so customers can have the perfect complimentary nibbles and bites to suit their tastes. Pancakes will also be added to the menu as Insomnia bar is affiliated with Stack & Still Pancake House.
Paul Reynolds, co-founder and chief executive, said: “We are extremely excited to be launching the capital’s first dedicated espresso martini bar. The popularity of the espresso martini is skyrocketing, and, like our pancakes, we want to be at the forefront of that revolution. Our menu is filled with many unique flavour combinations and we will be keeping customers on their toes with the introduction of new flavours every week.”

They originally opened in Glasgow October, 2020 and their Edinburgh location is on George Street within the esteemed Assembly Rooms beside the newest opening of Stack & Still.
