Hamish Bremner - Cocktail Master

Killiecrankie House is a luxury restaurant that has rooms in Scotland Cairngorms National Park. Hamish Bremner is coming to the house and will set up a home in the restaurants' Bijou bar. He is here to leave a mark. Overseeing everything from the drinks list to the staff training, the new master bartender is about to create a whole new summer bar menu. It will include locally foraged ingredients and even unique alterations on some classic cocktails.

Hamish is a Scottish native and a legendary mixologist, was previously working in The Clove Club in London, a world renowned two Michelin star restaurant. He claims that the move back to Scotland is something he is incredibly excited about.

“Killiecrankie House is really rather special. I’m looking forward to a new challenge, new team and familiarising myself with some of the wonderful local drink producers and suppliers, as well as working with the interesting plants and herbs that can be grown or foraged in this stunning area."

The wonderful produce and the ability to source locally is something that makes Scottish dining so special and unique. It even draws back talent from the busy streets of London. That being said Killiecrankie House is a special location. It has been described as a “fine-dining bolthole” and had been heralded in The Times as one of “Scotland’s best fine dining- restaurant with rooms. “It even received five stars from Scottish Fields restaurant critic, Richard Bath.

All of these accolades show the house to be a perfect match for Hamish. Matilda Tsappis and sommelier of Killiecrankie House said,

The new cocktails are akin to Matilda’s wine choices, a blend of classics as well as some more of the beaten track and experimental flavours. This is a sign of a high-quality restaurant and bar, an exploratory sprit. It is a tired and tested method for creating drinks that will satisfy all customers, and it will help Killiecrankie stay at the forefront of a creative and competitive industry.

Some of the cocktails are:

· Bramble Thicket – which includes foraged ingredients such as the flowering currant.

· Made from Girders – iron-bru blended with orange blossom and citrus.

· Killiecrankie Cure-All – a drink that re-imaged penicillin with Aquafaba, salted heather honey and blended Scotch.

A set dinner is served to everyone at 7.30pm Wednesday to Saturday. The bar is open from 12noon, Wednesday – Saturday.
