It has been revealed that the spectacular St Andrews Hall extension of the St James Quarter in Edinburgh will be the location of The Botanist’s first venture into Scotland. Nick Peek, Managing Director at St James Quarter, commented: “Spring has officially sprung here at St James Quarter as we welcome The Botanist to the family. With botanical themed interiors and refreshing cocktails, our customers are going to feel like they have been transported to an idyllic holiday destination.”
The Botanist marks an exciting addition to the formidable collection of foodie offerings at St James Quarter, which already includes Bonnie & Wild Scottish Marketplace, alongside pitstop dining brands such as Wingstop and Bross Bagels. The reason why it is so exciting, despite the many restaurants offered at the Quarter, is that this award-winning brand provides a new immersive experience entirely. It will be the first pub to grace St James, and while offering all the good comforts of a proper pub such as a classic Sunday roast, The Botanist is certainly no ordinary pub.
Renowned for lavish botanical themed interiors, delicious and inventive dishes, and world-famous quirky and refreshing cocktails, the Botanist has curated a high-end pub experience. In addition to elevated versions of classic British pub grub, they also draw international inspiration for their dishes—ranging from their signature 'hanging kebabs', camembert baked in a bread bowl, and a spicy Korean chicken burger. They really have something for everyone, including an amazing vegan board and vegetarian options too including their Coconut and Sweet Potato Pie.
What’s more is that their opening will mark the addition of a new Edinburgh brunch spot, which is music to my ears! Edinburgh really needs to expand upon its Saturday brunch options!
It is no surprise that The Botanist have chosen to open their first Scottish location at the St James Quarter. The St Andrews Hall overlooking Leith Walk is the newest extension to the innovative development of its world-class facilities. It is the perfect place for The Botanist to offer their unique experience to Edinburgh locals and tourists alike.
