Your Guide to Celebrating the Queen's Platinum Jubilee

This weekend the UK is gearing up to celebrate the Queen's Platinum Jubilee, marking 70 years of her Majesty's service as Monarch to the country. Across the UK, an extended bank holiday will culminate in a 4-day weekend lasting from Thursday the 2nd of June to Sunday the 5th of June. This holiday weekend will be filled with events and festivities so that people can properly celebrate the occasion. For those of us here in Scotland, here are some food-drink related events, celebrations, and ideas for how you can make the most of the Platinum Jubilee holiday.

Scotty Brand Giant 70 made from 400 strawberry tarts to celebrate Queen's Platinum Jubilee

If you fancy a trip to Glamis Castle (north of Dundee), this weekend will be filled with outdoor Platinum Jubilee celebrations. On June 3rd, the castle will be hosting a 'Pop Up Opera' where you can come and listen to classical opera. Three mini operas will be performed: Starting with ‘A Little Bit of Barber’ by Giacomo Rossini, followed by ‘A little Bit of Figaro’, by W.A. Mozart and finishing with ‘Be A Sport, Spike!’ by Karen MacIver. If opera is not for you, Glamis Castle will also be hosting a 'Live Music on the Lawn' event on Saturday the 4th of June. You can spend the day celebrating on the beautiful lawn whilst enjoying beautiful live acoustic instrumental music. The group playing will be Snuffbox, an acoustic trio from Glasgow comprised of BBC Radio Scotland Young Traditional Musician of the Year 2017 Charlie Stewart on fiddle; Rufus Huggan on cello; and Young Traditional Musician of the Year 2018 finalist, Luc McNally on guitar and vocals. The Jubilee weekend at Glamis Castle is certainly a great way for a music lover to celebrate this national holiday! What's more is that the Castle has a wonderful restaurant, perfect for refuelling as you celebrate the Jubilee.

Yondu's Coronation Chickpea

For those wanting to keep your celebrations more intimate, say if you are getting together with friends and family at a Picnic or Garden Party, you may be wondering what dish to bring. Seeing as so many people are vegan and vegetarian now, consider bringing something that everyone can get behind! Luckily, the seasoning brand Yondu has created the ultimate plant-based canapé options. Yondu Vegetable Umami is a plant-based, all-purpose seasoning that adds a moreish depth to a variety of cuisines and encourages its users to celebrate ‘The Joy of Veg’.The brand has specially created two recipes for this weekend which are vegan take on two classic Jubilee dishes: Coronation Chickpeas, and Green Pea and Mint Rolls! To bring something tasty that everyone can enjoy, follow either of these recipes:

Coronation Chickpeas

A plant-based version of the dish originally created for Queen Elizabeth II’s coronation which is fit for modern times. To be served with lettuce or as a filling for sandwiches or jacket potatoes.


Total time: 20 minutes Serves: 2

Ingredients: 400g chickpeas in water (save the water) 1 carrot, peeled and shredded 2 Tbsp mango chutney 2 Tbsp sultanas 1 Tbsp Yondu vegetable umami 2 Tsp curry powder 4 Tbsp chickpea mayonnaise (can be shop-bought or homemade – recipe below)

Chickpea Mayonnaise ingredients: 50ml of chickpea water (aquafaba) 2 Tsp Yondu vegatable umami 1 Tsp mustard 1 Tsp apple cider vinegar 250ml vegetable oil

Recipe:

  1. To make the mayonnaise, combine chickpea water, Yondu, mustard and apple cider vinegar in a jar. Using an immersion blender, start adding vegetable oil slowly. Whilst adding the oil, move the immersion blender up and down until you get the desired thick consistency.

  2. In a bowl, combine the chickpeas, carrot, mango chutney, sultanas, Yondu, curry powder and mayonnaise. Mix all well together and serve cold.

Green pea and mint rolls

Those that are wanting to avoid cooking this weekend, there are also lots of restaurants doing exciting special menus to celebrate the Queen's Platinum Jubilee. For example, one of our favourite burger joints, Byron Burger, has announced the launch of their 'Bites of British' range. This includes 'The Elizabeefan' Burger (bun or no bun) and an Eton Mess Shake...to help celebrate Her Majesty's Platinum Jubilee! The Elizabeefan Burger is made using an Aberdeen Angus beef patty, topped with slow-cooked roast beef brisket, Red Leicester cheese, watercress, pickled red onions, and a quintessentially British horseradish mayo. To do like the Queen in her honour, opt for a bun-less burger! For those of us with a sweet tooth, finish off the meal with a limited edition indulgent creamy 'Eton Mess' shake. An interactive treat, the Eton mess shake is a fruity combination of vanilla ice cream, strawberry coulis, topped with a meringue nest, whipped cream and fresh strawberries. You need to crack through the crispy meringue shell to get to the fruity delights within! The nation’s favourite dessert in a shake! Byron has also introduced new sides to make sure you can really kick off the Royal celebration. They even offer the new menu on Deliveroo!


If you want to celebrate in style with a fancier Jubilee dinner in Edinburgh, then Harvey Nichols is hosting a Platinum Queens Jubilee Event: 'A Feast Fit For A Queen'. The Forth Floor kitchen is hosting a premium dinner event for one night only! Guests can enjoy a spectacular feast while enjoying the beautiful views of Edinburgh Castle and the New Town from the Brasserie's dining room. Those in attendance will enjoy a 7-course tasting menu to commemorate every decade that the Queen has ruled— a true feast! Each dish will be a tribute to the delicious food and fresh ingredients we have here in the UK: "Every course is a celebration of British produce from both the land and the sea. Quintessentially classic British cuisine features in dishes such as roasted lamb served with

smoked bacon croquette, British asparagus, mint and caper salsa, whilst a further nod to Scotland is evident in courses like the Cullen skink, which is served with St Andrew’s cheddar and truffle chives. The menu also shines the spotlight on the seasonal ingredients enjoyed in the British summer season with dishes like Eton mess served with strawberries, vanilla cream, meringue and strawberry coulis." Sounds divine! A vegetarian menu will also be available, which will highlight beautiful native vegetables.


Harvey Nichols has also created a limited-edition Platinum Jubilee cocktail, Lilibet, using the Queen's favourite alcoholic drinks: Gin, Vermouth and Champagne, which are all perfectly combined. The cocktail also includes strawberry liqueur and a strawberry fruit garnish – strawberries being one of the Queen’s favourite fruit.

One last foodie event is definitely worth mentioning: Tigerlily is launching an afternoon tea fit for a Queen! To celebrate the Royal holiday, Tigerlily on George Street in Edinburgh is offering a Deluxe Jubilee Afternoon Tea for the Jubilee weekend only. Their executive chef, Tony Sarton, has built a limited edition high tea menu inspired by her Majesty the Queen's magical summer garden party. Expect regally inspired morsels such as Cucumber Sandwiches, Coronation Chicken Brioche Rolls, Smoked Salmon Pin Wheels and Royal themed sweet treats like Mini Victoria Sponges, Crowned Dark Chocolate Marquise and Battenberg Cake, not forgetting the much loved British favourite - Buttermilk Scones with Clotted Cream & Strawberry Jam. Wow! Get yourself in the Bank Holiday mood with a Bridgerton style afternoon! If you are interested in this limited offer, there are three booking options: Deluxe Jubilee Tea (with a Special Jubilee Whispering Angel Wine), Cocktail Jubilee Tea (with various limited edition cocktails) and Champagne Jubilee Tea. To commemorate this special occasion, many food and drinks producers have found their own creative ways to celebrate this Royal anniversary. Stirling Distillery, situated in the shadow of Stirling Castle, is launching a limited edition Platinum Gin to celebrate the Jubilee. Stirling Distillery has a royal connection - James VI is said to have stabled his horses where the ‘Old Smiddy’ building sits – they wanted to pay homage to Her Majesty and her incredible 70 years of service with this striking bottle of their nettle-based classic gin. The Scottish distillery will be created a limited 500 bottles of this extra special bottle, with

an eye-catching design fit for a Queen. The bottle celebrates the Stirlingshire nettles that give their gin the unique flavour of Stirlingshire’s countryside. Presented in a regal laurel wreath design with royal crowns hidden through the design. Each bottle is hand-dipped in a platinum wax seal and filled with Stirling Distillery’s signature nettle gin. Made with carefully chosen botanicals including basil and citrus peel to create a complex spirit, the smooth, lingering finish carries a peppery tang that is both spicy and dry. By using local nettles the distillery is working to provide a sustainably sourced spirit. Scottish Food supplier Scotty Brand is another brand that is celebrating the Jubilee. They have gone above and beyond in terms of creativity, teaming up with a Perthshire chef to create a giant 70 made from 400 strawberry tarts in honour of the Platinum Jubilee. This venture also celebrates the beginning of Strawberry season: their first of the season Scottish strawberries will be hitting Asda shelves Monday, June 6th. The giant 70 was created in a field at Bruce Farms near Meigle in Perthshire, a family-run farm which provides all the sweet and juicy strawberries and raspberries for Scotty Brand. The individual pastries were then donated to three care homes in Meigle, Coupar Angus and Blairgowrie as a contribution to the Jubilee celebrations being held for residents and staff. Michael Jarvis, head of marketing at Scotty Brand, said:

“Strawberries are always an exciting addition to our portfolio during the summer months and they’re the perfect ingredient for a magical Jubilee celebration. Scotty Brand is proud to mark the 70th anniversary of the Queen’s reign and to be helping local care homes celebrate the Platinum Jubilee in style through our collaboration with local chef Tim Dover, who’s created 400 of the most delicious-looking tarts with our berries, which are grown by the team at Bruce Farms. Scottish berries are hugely popular both north and south of the border and we know they’ll be enjoyed by families the length and breadth of the country this summer. This year Scotty Brand is producing around 300 tonnes of strawberries for sale all over the UK – that’s more than the weight of a Boeing 747, or about 25 double-decker buses!”

No matter how you may spend this weekend, we hope that everyone gets the chance to enjoy time off and take part in the various festivities. One thing that many people are looking forward to this year is getting the chance to get together in larger groups now that restrictions have been lifted. One way that people are getting together all over the country is street parties and public park events, such as those in Princes St Gardens in Edinburgh and Greenbank Garden in Glasgow.
